1. STICKY DATE AND PECAN PUDDING

Yields: Ten servings
Ingredients
• Dried dates – one and a half cup (chopped)
• Baking soda -1 tsp
• Soft butter -100grams
• Caster sugar – three fourth of a cup
• Eggs-3
• Self raising Flour – one third of a cup
• Pecan- three fourth of a cup (toasted and chopped)
• Double cream and Butterscotch sauce to serve with
Instructions
• Oven is preheated to about 180 Centigrade.
• Take a cake pan (depth-6cm) and grease it.
• Line the pan base using a baking paper.
• Add cold water and dates and boil it in a sauce pan on a medium heat.
• Add baking soda after removing it from heat.
• Let it sit for few minutes.
• Mix it to get a smooth paste.
• Combine castor sugar and butter and mix them with 1 egg at a time.
• Add flour and mixture of dates and chopped pecans into this batter.
• Spread it in the cake pan.
• It needs to be baked for about an hour.
• Later remove and let it cool for few minutes.
• It is ready to be served with double cream and butterscotch sauce.
